Beet Beta vulgaris

The fast, forgiving cool-season root crop that gives you two harvests in one — sweet, earthy roots below and tender, glossy greens above. Each knobby seed is actually a cluster of several seeds, so beets come up thick and need thinning, but otherwise they ask little and size up quickly in cool weather.

Light

Beets do best in full sun — at least 6 hours of direct light a day — which fuels both the leafy tops and the swelling root beneath. They tolerate light afternoon shade better than most root crops, and a little shade is genuinely helpful in hot regions, where it keeps the soil cooler and slows the plants from bolting to seed. In deep shade, though, you get lush but floppy tops and small, slow roots, since the leaves can't gather enough energy to size up the root. Because beets give a double harvest of roots and greens, even partly shaded beds still yield a worthwhile cut of leaves. For full, well-shaped roots, pick the most open, sunny bed you have and keep taller crops from casting it into shadow.

Watering

Beets need steady, even moisture — about 1 inch of water per week — to grow tender roots without cracking. The most critical stretch is germination, when the seedbed must stay consistently damp for the one to two weeks it takes the seed clusters to sprout; if the surface crusts and dries, emergence is patchy. Once seedlings are up, water deeply and regularly rather than in light sprinkles, encouraging roots to swell smoothly. Inconsistent watering — long dry spells broken by a heavy soak — makes roots crack, split, or develop tough, woody zones and white rings. A light mulch between rows steadies soil moisture and buffers heat. Ease off only slightly as roots approach harvest size.

Soil & potting

Beets want loose, fertile, well-draining soil worked deeply and raked free of stones and clods, since obstructions deform the rounding root. Aim for a near-neutral pH of 6.0–7.0; they are notably sensitive to acidity, so lime an acid bed the season before. Work in finished compost for fertility and tilth, but avoid fresh manure, which can cause forking. Beets are also one of the few crops that genuinely need boron — a deficiency causes black, corky internal spots, common in sandy or over-limed soils — so compost-rich ground is the surest safeguard. In heavy clay, loosen the bed or build a raised bed of light, sandy loam so the roots can swell freely without resistance.

Humidity & temperature

Beets are a cool-season crop, sweetest and best-shaped in the mild temperatures of spring and fall. Seeds germinate over a wide range but most reliably in 50–75°F soil; sustained heat above 80–85°F slows growth, can make roots tough and stringy, and pushes plants to bolt. Established beets are quite cold-hardy and shrug off light frosts, which actually concentrate sugars in the root and make for a sweeter fall harvest. In mild zones, mature beets can hold in the ground under a thick straw mulch through early winter. Time spring sowings to mature before high summer, and lean on fall plantings in hot climates, where the cool tail of the season produces the finest roots.

Fertilizing

Beets are moderate feeders that respond best to balanced fertility rather than heavy nitrogen. Too much nitrogen produces enormous tops at the expense of the root, so work a measured amount of finished compost or a balanced, phosphorus- and potassium-leaning fertilizer into the bed before sowing — these nutrients drive root development and sugar. Roughly four to five weeks after sowing, if growth seems sluggish or leaves pale, a single light side-dressing or a dose of liquid fertilizer keeps the plants moving. Because beets need boron, compost-amended soil also helps prevent the internal black spotting of deficiency. Well-prepared ground usually carries the crop to harvest with little or no extra feeding.

Pruning & maintenance

Beets aren't pruned, but thinning is the essential task that replaces it. Because each crinkly "seed" is a cluster, seedlings emerge crowded and must be thinned or roots stay small and misshapen. When seedlings reach 2–3 inches tall, thin to about 3–4 inches apart, snipping the extras at soil level rather than pulling so you don't disturb the keepers — and toss those tender thinnings into a salad. Harvest roots 50–70 days after sowing, when they reach 1½ to 3 inches across; lift gently with a fork. You can also pick a few outer leaves from each plant as cut-and-come-again greens along the way without harming root growth, leaving the central crown intact.

Propagation

Beets are grown from seed sown directly where they'll grow, since they transplant only fair-to-poorly and direct sowing avoids the check that stunts roots. Sow the seed clusters about ½ inch deep and 1 to 2 inches apart in well-prepared, stone-free soil, then keep the surface evenly moist until sprouts appear in 1–2 weeks. Soaking the clusters overnight before sowing speeds and evens germination. Because each cluster yields several seedlings, expect to thin once they're up. Sow successively every 2–3 weeks for a continuous supply. To save your own seed, overwinter a few roots and let them flower the next year, as beets are biennials that set seed in their second season.

Through the year

Spring

Direct-sow as soon as the soil can be worked, 2–4 weeks before the last frost; keep the seedbed evenly moist and thin seedlings once they're a few inches tall.

Summer

Keep moisture steady to prevent cracking and woodiness; shade germinating beds from heat, harvest spring-sown roots before high temperatures toughen them, and sow a late crop in midsummer.

Fall

Prime season — fall-sown roots sweeten after light frosts; harvest at golf-ball to tennis-ball size, and pick greens generously.

Winter

Mulch heavily with straw to hold roots in the ground in milder zones, or store harvested roots in a cool, humid spot; plan next year's successions.

Companion planting

Good company for bush beans, lettuce, onions, garlic, and members of the cabbage family; keep beets away from pole beans, which stunt each other.
